i see Rangers get Pets... what do elementals get? and are they restricted to your main profession?

NO, they aren't restricted to main Prof. I have a Monk/Ranger, that has a Wolf pet; we kick butt in post-sear. The wolf does more damage than other pets. (bird,Panther)

How do you uncharm an animal so you can pick another?

You can't uncharm an animal. There is a pet trader in Old Ascalon that you can sell your pet to. Once you've done that, you can charm another pet.
